Yum! I always hesitate to make pie as making the crust and the filling seems like twice the work of making a cake, but will have to try this! But I think I'll double the crust recipe and stash half the crust dough in the fridge for a second pie. How long will the pie dough keep refrigerated? A couple of days? (The first pie will likely be GONE in a few days!) Julia, crust will be good for a couple of days in the fridge, longer in the freezer - couple of months, probably, well wrapped. I agree - if you're making one crust, might as well make four. Enjoy! PJH
