One thing you can try is a trick I learned from making carnitas. Take some of that cooking liquid and simmer it down to thicken. Then put your shredded pork in a foil lined pan. Drizzle the reduced sauce over the pork. Then place the pan in the oven and broil for a couple minutes, stir/flip the meat, then broil again. You get some great texture and flavor as the juice carmelizes on the meat. Super yummy! Maybe it'll come close to the missing "burnt ends". :)
