Hi Melody, thanks for offering your own croissant tips! Since our unbleached all-purpose flour is higher in protein than other brands of all-purpose, we've found it can work very well for making croissants, but a lot depends on the recipe, and it sounds like you've found just the right combination of flours to work well in your recipe.
