A pastry class I took does everything by weights, measure and temperature. I knead the dough in my kitchen aid pro until the temp is 75degrees F. The butter should be 55deg F. So when I take my dough out of the fridge, I stick my instant read thermometer in it and if it’s not 55 deg, I just let it sit on the counter for a bit.
