Your recipes never let me down ! Your blogs and bakers, that are so sweet at answering all my many questions, have made me into a baker ! I rushed though this process because I made a late decision to make them for a Easter party. [had nothing else to contribute.] They were a total hit ! Even better than the ones that came from the French bakery down the street ! I thought! It was my third time making this recipe and even with a few mistakes ( dough didn’t chill up quite as much as the butter, and I wanted to get to bed so rushed it anyway) they were still very good! Short night of sleep because I had to get up early enough to finish them and then still took them to the party to bake (in the end a very good move, hot right out of her oven!) I need to work on my folds, my”book” didn’t seem quite squared up enough, I think because of the dough not being quite cold enough. The French baker’s did have more space between layers but mine had much more of a nice crisp outside and nice buttery flavor! Found a butter that had a 15% butter fat content! (Open nature) ! So even though I know I can do better, this recipe should not scare anyone ! You will still impress your friends even if you make a few mistakes! Oh also I cut them wrong (rushing) and made 24 out of half the batch of dough! The smaller size made it easier to have just one more ! Lol! None left over!
