During this covid experience,I have been experimenting with recipes for the croissants.One from Julia Child and one from Martha Stewart. They didn't call for eggs. What does this add? What is the flour to use. I used bread and unbleached for Martha's --they are chewy. The other ones werent and I used bread flour. Help. Thanks a lot
