Greetings, I plan to roll my dough and cut my croissant triangles in the morning. After studying the triangles around the Internet, I noticed some people clip the croissant dough on the wide part of the triangle (before rolling) while others leave that end unclipped. What is the purpose of this little cut? Is it necessary to ensure a good croissant? Thanks and have a lovely first week of Spring .
