Hi there, Kimberly. We're very sorry to hear that your croissants didn't turn out well and thank you for bringing the issue of the missing second rise in the Sift article to our attention. Not going through the second rise time after shaping and refrigeration would result in croissants that aren't quite as expected. While all Sift articles go through many proofreadings and lots of checkpoints, every once and a while something can slip through and it looks like that may have been the case here — our sincere apologies.
