Hooray for you, Clare! Yes, indeed, you can use the dough to make Kouign Aman; after thawing it overnight in the refrigerator use sugar instead of flour to roll it out and fold once more. Cut into squares, tuck into buttered and sugared muffin cups, and bake. You can roll it in sugar after baking, too, depending on how decadent you're feeling....Susan
