Hi Mona! After defrosting in the fridge overnight your croissants will most likely still need time to finish rising at room temperature; when they are fully risen they will be noticeably puffy and when you press on them with your finger, your indentation should remain. While the croissants are defrosting and rising, you will want to keep the dough covered to prevent it from drying out on the top. Happy baking! Morgan@KAF
