Hi, Kristyn. You can freeze them unbaked, and let them thaw overnight in the refrigerator before you want to bake them. Let them proof in a warm place until they start to look a little puffy. You will probably not get as much lift from the yeast, but if the lamination is sound they'll be delicious. Susan
