Eggs give croissant dough the lovely yellow color and also contribute to flavor and texture, Arja. There are different ways of making beurrage. Sometimes recipes call for the addition of lemon juice also. The flour helps to stabilize the butter so it doesn't "flow" out the seams when it is being rolled. It is fine to follow a different recipe for the beurrage, as long as it is the same weight. It is fine to refrigerate the dough for a brief period after each turn.
