We have a full post about this technique exactly, Kelly! It's called Summer fruit scones, and it outlines how to best add fresh fruit to your scones. It features our scones made with all-purpose flour, but the same general guidelines apply to gluten-free scones too. If you want to add fresh strawberries to your gluten-free scones, you might want to consider using our Strawberries & Cream Scone recipe and using our Gluten-Free Measure for Measure Flour to replace the all-purpose flour in the recipe.
