How about mixing them the night before, keeping them in the refrigerator overnight and baking them in the morning, rather than freezing? Scones are best frozen (think about the hardened butter making those flaky layers), then baked when you need them. On any given morning when you need fresh baked scones, remove scones from freezer, preheat the oven, make the coffee or tea, bake the scones and you'll have other sleepy heads joining you for a perfectly delicious morning.
