One of my favorite things to do with cooled chocolate cupcakes is to defrost some leftover Vanilla Bean Italian Meringue buttercream from the freezer, whip it up, stick a sharp tip on a cake deco bag, stick it down into the top of the cupcake and fill that baby with frosting... Then, make warm ganache and put it into a plastic squeeze bottle (the kind used for making homemade chocolates) and squeeze a puddle of ganache on the top of each heavenly cake. So easy, and folks love the "surprise" in the middle... Well, now I know what I'm making this weekend ;P Whoa - sounds GREAT. Hostess cupcakes on steroids! :) PJH
