Susan, I'm so excited- now I know how to make Italian Buttercream! Glad to see you using meringue powder- what a great product for this. Question: When you add the berries are they folded in or do you use the mixer to break them up a bit? Would love to use for my granddaughter's birthday cake! Thanks for this post! Valleri Valleri: I just use the paddle at low speed and watch, hypnotized, as the berries plop in and begin to add color to the frosting in beautiful swirls. When I have a color I like and there are still discernable chunks of berries, I stop. Susan
