I just made this and it is incredible. Loved it. I think next time I'll make it just a tad sweeter and make more of the sugar syrup. However, I was wondering if I could use just the meringue part; before adding the sugar syrup? I tasted it and it tasted like marshmallow. Yum!! Would this hold up as icing? Unfortunately, this would not make an ideal or stable icing
