So, can't freeze it before baking? If I cook it first, do you think freezing it will affect the taste or the texture? Yes, this blog post outlines how to freeze a fruit pie before baking. You can also freeze it after it's baked. If you know you're going to do that, I'd bake it slightly less before cooling and freezing. Then, once it's thawed, put it back in the oven for 20 to 30 minutes or so, to "freshen" and heat it thoroughly. Good luck - PJH
