I've done my share as well, like forgetting to put the eggs into a batch of mundlbroit. Not good... I realized the mistake when they didn't rise in the oven, then saw the eggs sitting on the counter. I ended up putting it into the food processor and turning it into crumbs for a cheesecake crust. You might also include another "fixable"... Broken custard. If you over cook the custard slightly, it will break and become grainy. Just use a blender (immersion or otherwise) and a little cream to re-blend it. I've fixed lots of broken hollandaises and bechamels, but hadn't thought of doing so with a custard. The immersion blender has saved many a Caesar dressing in my past. Susan
