I use the last of this dough to make the boule. I thought that the flour left somewhat of a bitter taste on the crust. I would just rather cover the dough to keep it from becoming dry. Is it okay to cover rather than using so much flour.? Sure, Cheryl - I've done it without covering and without flour, too. This is a VERY friendly dough... PJH
