I made this today and it looks like it has risen properly but I just realized that I forgot the salt!!!! Is this going to be a problem for this bread??? I am getting ready to bake a portion of it, I am very upset with myself that I forgot the salt can anyone tell me what problems this may cause. No problem, Patti - it'll just taste "flat." Tuscan bread is made without salt because they serve it with salty cured meats and cheeses; just be sure to serve with salted butter, or something aggressively flavorful, to hide the fact the bread has no salt... PJH
