Hi Jim- There are a few things that could be happening. One thing could be to much flour depending on how you are measuring your flour, although if you find you bread is sticky and the dough itself doesn't feel too heavy then this may not be the case. What I am guessing is you may be over-proofing the dough a bit, so it is crashing in the oven and destroying all that light and risen structure it had built up.
