If I let the dough sit in the covered bowl in the refrigerator for the full 7 days without pulling from it, is there anything that I need to do with the dough day-to-day, such as press down/oil/flour? Also, after I pull from it, do I need to dress the remaining dough that's going back into the fridge (oil, flour, kneed etc)? Thanks! Short answers, Brendan - no, and no.
