If you are using a 2lb bag of King Arthur All Purpose Flour, you will need a little extra water. I have been weighing the 2lb bags I purchase and they are consistently between 2 lb 2 oz and 2 lb 3 oz. The empty bag weights 3/8 oz so that does not account for much of the extra weight. I find that when using a bag of flour, 26 oz of water is needed to get the proportions right. Thanks for sharing your kitchen action research! Happy Baking! Irene@KAF
