I LOVE crystallized ginger chips!!! I don't make a batch of gingersnaps without them - I will definitely be trying this recipe tonight to share with my fellow teachers tomorrow before Thanksgiving Vacation! Will let you know how they turn out... Thanks for baking and sharing, Erin - 'tis the season, eh? Hope your fellow teachers appreciate ginger like you do! PJH
