I love how this bread looks and I love having the little loaf to share .... Question: Can I substitute diastatic malt powder for the ascorbic acid? Yes, you can use the diastatic malt for the ascorbic acid. Just remember with diastatic malt that a little goes a long way, and too much will turn your dough into soup, so use just 1/4 teaspoon, no more. Happy Baking!~ MaryJane
