Hi Michael, you could certainly make crumpets with part whole wheat flour and part white flour, or even all whole wheat flour, but I would expect a denser result the more whole wheat flour you add. Also keep in mind that whole wheat flour absorbs more liquid than unbleached all-purpose flour, so I would recommend adding about 1 tablespoon extra liquid per each cup of whole wheat flour substituted.
