Went to the farmer's market here in NC today and got fresh off the tree Granny Smith apples to make this cake. It was delicious! One thing I would change is to perhaps cook the apple slices first in a skillet to soften them just a tad before mixing with the sugar, boiled cider, etc and putting on top of the batter. My apples slices, when done baking, were still a bit crunchy. I would have like them just a little softer. Good modification, Sandy, for those who like their apples softer... PJH
