Just baked my first Almost No-Knead Baguette. I've been baking bread at home for 25 years and this is one of the best baguette's I've ever done! The crust was just right and the crumb perfect. My wife and I ate the whole loaf before it was cooled. The dough was not as wet as I expected...could be because it is winter and very dry. Also could be I used a measuring cup for the flour and I'm not so accurate with that. Anyway, it's New Years Eve and I'm going to bake the remaining three loaves. I'm planning on pasta with tomato's for dinner tonight...can't wait to have this bread with my meal. If my neighbors are lucky, I'll share a loaf with them.
