I read only a few of the previous posts, but what if i wanted to use King arthur bread flour rather than the AP flour? i know that protein contents are different, i just dont know by how much... Never mind, a simple ctrl+f and typing in bread flour yielded the results i was looking for. sorry for wasting your time!. the reason i ask, i cant always get KA AP flour for 4$ a bag. Im a full time mechanical engineering student so money is scarce! haha. So another store caries the KA bread flour at a awesome price of 3.16$ and thats the standard price. thanks Matt You're never wasting anyone's time here, Matt - we're here to answer your questions, anytime. Glad you were able to find the info. you were looking for: AP flour = 11.7% protein, bread flour = 12.7% protein. That's a great price on the bread flour, BTW - I'd say stock up!
