I'm on a low-sodium diet. Can I make this without the salt, or with less than a quarter of the salt? I miss baguettes. You can, Liz. They'll taste flat, and will rise very quickly, so cut down on the yeast by about half if you make without salt. Also, try letting the shaped baguette rise overnight in the fridge (covered); this will definitely heighten the flavor. Good luck - PJH
