I made this dough 4 days ago, and baked the first loaf 2 days ago. The crust was beautiful and crackly, but the inside of the bread was more like a sandwich bread texture. I plan to bake 2 more loaves tonight. I thought the dough flavor was a bit "mild" the first time, so I am hoping that waiting for a few days for the flavor to develop will correct this. I measured out all my flour, 34 oz with a scale.
