Hello. I buy fresh yeast. How much should I use for this recipie? My dough came a little stiffy. Note: I can buy fresh yeast at Pace's in Saugus MA. Any Italian?American store with the bakery would carry...but not on the counter. You need to ask, it is as big as a brick. :)
Hi - use a scant 1/4 teaspoon fresh yeast in the overnight starter; and 1 tablespoon fresh yeast in the dough. BTW, I LOVE Pace's in the North End - wonder of Saugus store is the same family? Great olive and cheese selection... PJH
