Hi there! Going to give this a try..now, I have a source for fresh yeast. How do you substitute the dried yeast for fresh yeast? And is this going to give good results? You may substitute fresh for dry yeast in your recipe. Some bakers really prefer fresh yeast for the flavor it imparts. Fresh yeast is not as practical as dry as it is has a short shelf life. But, if you are a frequent bread baker, no problem! Use about an 1 oz of fresh yeast in this recipe. Redstar has a great yeast conversion chart for your future reference. Elisabeth
