Do you have to have a bread mixer to do this? Because I only have a little hand mixer and no room for some big monster on my counter. Or could I just do this by hand?

People have been kneading baguette dough by hand for centuries, so sure, give it a try. Understand your rising times may be a bit longer. You might also be interested in turning this No-Knead Crusty White Bread into baguettes; time takes the place of kneading in developing the dough, and adds super flavor. Good luck - PJH
