I made this recipe a few weeks ago. I baked one loaf and froze the rest of the dough in three packages. The loaf I baked turned out fine. I defrosted one of the packages of dough in the refrigerator for 24 hours, and then took it out of the fridge today for 15 minutes and then continued the baking process according to the recipe.
However the dough never rose. It was very wet when I took it out of the package and very sticky. I used a lot of flour on the mat and was able to shape it to the right size, but after 1 1/2 hours it was still flat.
It is super humid here so that may be part of the issue but the dough was definitely very wet even before it was out in the air. Any ideas why it didn't rise or what I can do next time?
Some thoughts:
- I left it in the package both while it defrosted and while it was sitting on the counter. Should I have unwrapped it for any part of that?
- I covered it with wax paper while I was letting it rise (with a towel over that). That is how I usually do it when I bake challah. The wax paper completely stuck to it though b/c it was so wet. Could that have impacted the rising?
I am hoping to be able to use the other two packages of dough but I expect they are the same consistency. Any suggestions? Can I add more flour? Anything else to make it rise?
