I make this recipe and have the bread on hand at all times. i get rave reviews. I keep the loaves in the freezer to keep them fresh and I often give one to friends who are extremely appreciative. The Bucket is a must. I do not use a mixer and use Bread Flour. I also add 1 T. of sugar. I bake the entire recipe in 2 clay bakers. The King Arthur oblong clay baker is extremely good quality. I got it as a gift. My clay cloche was a yard sale find. It had never been used. This is the best, most versatile bread recipe I have found.
