I just stopped using bleached flour in all my cooking so I am super excited about this unbleached cake flour!! Did you know bleached flour is not allowed in Europe? I knew bromated flour was banned in Europe and Japan, Jen - hadn't heard about bleached. Did you know that millers bleach flour by donning their protective suits and mixing the flour with powdered bleach? No wonder it's banned - YUCK! PJH
