1) I have never used cake flour before because I have never tried making a layer cake from scratch. With cake mixes available, baking a cake from scratch just seemed like an experiment in disaster! I am primarily a bread baker. 2) I would use the flour to make a cake with and for my little granddaughters, who love to make bread with me, (and love to eat it!)
