I always use cake flour for cakes and I've tried all the brands (we've lived all over the country). I don't like the idea of bleaching but so far, I hadn't run across an unbleached cake flour. I definitely want to try King Arthur's unbleached cake flour. I grew up watching my mom only use KAF flours, and that's what I always tried to use -- especially for my bread making. And I'm so glad that now I usually can find KAF in just about every place I shop! I would love to use this flour to make your featured cake -- I even can pick the raspberries down the street -- for my sister's family that we are visiting for the next month. She has three teenagers and they all love cake so much they eat it for breakfast when it's leftover!
