I have used Softasilk and Swans Down cake flours for cakes and jelly rolls. I really like the texture of the finished baked product. I've never seen the Queen Guenevere flour in my local store. I am very much looking forward to the King Arthur unbleached cake flour since I exclusively use the KAF brand of products for all of my baking needs. I would bake the raspberry cake for my husband whose birthday happens to be on August 12th. He always wants raspberry filling in his bakery purchased cakes so I know he would love this recipe.
