1. I haven't used cake flour that frequently, but I think the only variety I've used is Swans Down - that's the only kind stocked in my local grocery store (although hopefully they'll get the KA version now!) 2. I'd bake a special cake for my neighborhood book club. They're my most appreciative audience for baked goods and I like to try new recipes out on them.
