1) I have never used cake flour, except the Joy of Cooking formula involving the addition of cornstarch, which was a disaster! 2) My husband and I are making wedding cake for 100 for a dear friend this fall. If we had a box of the flour, we would experiment with it and perhaps use it in the final cakes.
