Cream cheese is a no-no on my diet—could I substitute ricotta in the crust? I don't think so... the consistency of the cream cheese contributes to the structure. You could substitute maybe 3 tablespoons of butter and some extra water? Or try the ricotta - but you'd need to cut back or eliminate the water, I think. Good luck - PJH
