Kevin, if "just a pinch of sugar and salt," means you reduced both of these ingredients in the recipe, that's why the loaf came out bland. The best flavor will come from using the full amount of both of these ingredients, otherwise the loaf will be quite bland as you experienced. We hope you give it another shot using 1 tablespoon sugar and 2 1/2 teaspoons salt. It will make a world of difference! Kye@KAF
