Hi PJH: Thanks a lot for your answer!!! you are a nice person and baker!!! so, in the next extra tangy sourdough bread I will use the stand mixer with the hook, I don't have bread machine and I normally knead the dough by hand, and then I will tell you my results!!! have a nice day!!!!
