Um, I *love* sour sourdough, like I used to get in San Fran, but I'm not sure about the 2 days of work. I'm more of an instant gratification guy... Still.... Hmmm..... Mike - it's not 2 days of work - it's 2 days of "gentle tending" and waiting, mainly. You should give this a try, really, if you love that REALLY sour San Francisco-style bread... PJH
