Here in Pennsylvania we enjoy "Periogi Pizza." This is based on the treat from the nearby Coal Country town, manufactured as Mrs. T's in Shenandoah, PA. Traditional periogies are whipped potatoes and cheese (and sometimes other flavor combinations) stuffed in a pasta pocket and pan or deep fried. Periogi Pizza usually starts with a pizza crust topped with mashed potatoes, onions fried in butter, cheese and sliced ham. Sometimes constructed as a stuffed pie, it is delicious!
