my favorite topping combo: mozzarella cheese, sliced fennel bulbs, sliced red onions, red bell peppers and cilantro! I always seem to have the problem of my parchment paper smoking in the oven. Is it from the non-stick spray? Just bad paper? The semolina is a great tip for pizza - I never would have considered it! Anne, I never use non-stick spray on my parchment - because nothing sticks to it anyway... So could be the spray. Also, our test ovens don't get up to 500°F - so perhaps, if you're baking at 500°F, the parchment smokes? My parchment does turn brown at 450°F, but doesn't smoke... As for your toppings - Oh, boy... does THAT sound good! Guess I'll have to make pizza again this week- :) PJH
