I saw a youtube video that instead hanging the baked Panettone she left it in the oven after she baked it with the door slightly open so that it will cool down slowly in the oven and will not shrink. I tried it and it work for me. I don't have Panettone mold because it is expensive. I made my own mold using parchment paper.
